Sweet Potato Hash
by Phyllis Speer
- ˝ lb smoked bacon, diced
- 2 Tbsp. bacon grease or vegetable oil
- 1 medium onion, chopped
- 1 large red bell pepper, chopped
- 4 cloves garlic, minced
- 3 lbs. sweet potatoes, cubed
- Salt & pepper to taste
Cook bacon in large skillet until brown. Remove from skillet and place on paper towel to drain. Pour off all bacon grease, leaving 2 tablespoons in skillet. Add onion, red pepper, and garlic. Sauté until soft. Remove from skillet and set aside. Add cubed sweet potatoes to skillet and cook until potatoes begin to soften. Remove from heat and add onions and peppers to skillet. Salt and pepper to taste and mix well. Sprinkle bacon over sweet potato mixture. Bake at 400-degrees about 30 minutes.
Optional: Make 4 indentations in the potato mixture before putting in oven. Break an egg in each hole, sprinkle with bacon and proceed with baking. Makes an excellent breakfast dish.

My husband & I love to watch Phyllis & John do their "thing" in the "Arkansas Outdoors" show. We love both the outdoors part and the cooking part. Keep it up! We also watch the other Arkansas show on your station, too, but like Phyllis & John's show the best!
