Crawfish Stuffed Mushrooms

Crawfish Stuffed Mushrooms

  • 12 large fresh button or 6 medium portabella mushrooms
  • 8 oz. package crawfish tails, chopped
  • 3 slices smoked bacon, diced, cooked and drained
  • ¾ cup sharp cheddar, finely shredded
  • 8 Tbsp. butter, room temperature
  • ½ cup green onion, finely chopped
  • 2 Tbsp. flat parsley, finely chopped
  • 1 Tbsp. prepared horseradish
  • 2 garlic cloves, minced
  • Salt & pepper to taste
  • 2 tsp. Emeril seasoning, divided
  • ¼ cup plain bread crumbs

Clean mushrooms and carefully remove stems.  Combine next 9 ingredients.  Add 1 tsp. Emeril seasoning.  Mix well.  Stuff mushrooms.  Mix remaining Emeril seasoning with breadcrumbs and sprinkle top of stuffed mushrooms.  Cook on grill until cheese has melted and mushrooms heated through, about 25 to 30 minutes.
